1-Minute Almond Cinnamon Muffin Recipe

You’ll need:

  • A cup
  • 1 egg
  • 1/4 cup Almond flour, which is about 25g by weight (sometimes called almond meal or ground almonds)
  • 2 teaspoons cinnamon (or other flavoring if you prefer)
  • 1 teaspoon baking powder
  • 1 teaspoon coconut oil
  • 2 packets or 2 teaspoons Stevia. I use Truvia or Tesco brand granulated stevia.

Simply put everything in a cup and mix well. Bang it in the microwave for 80 seconds (yep I lied when I said 1 minute) and you’re all set!
