Low Carb Pizza Recipe

by Mark McManus on September 15, 2008

low-carb-pizza-recipeMan I LOVE this recipe!

Yes you can have pizza on a low-carb diet, but you have to make it yourself :o

Think about it. All the ingredients in a pizza are low carb except the crust. There are 2 ways to get around this:

  1. Go Crustless!
  2. Use a Low Carb Tortilla as a base

Now I know what you’re thinking, “If there’s no crust, it’ll just be a sloppy mess”. Not so.

The crustless pizza can be sliced and picked up by hand.
How?
The cheese turns hard and crunchy itself, it’s really cool.

Low Carb Pizza Recipe

Here’s what you need:

  1. Ground beef(cooked) or sliced chicken (cooked)
  2. Ham
  3. Pepperoni
  4. Mushrooms
  5. Green Peppers
  6. Pizza Sauce
  7. Mozzarella cheese

Instructions:

  1. Throw some grated cheese into the frying pan/skillet. Arrange it into a circle, this is your base.
  2. Now turn on the pan to a medium/high heat and fry cheese until edges are turning brown.
  3. Now spoon on your pizza sauce
  4. Immediately add the rest of your ingredients in the quantities you’d like
  5. Now simply wait a minute until the underside of the cheese is hard (don’t worry, it will!). Be careful not to burn it though.
  6. Remove from heat, slice with pizza cutter and enjoy!

Once you add your sauce and toppings, you’re only a couple of minutes from being done. If you find your chicken or beef isn’t hot enough, stick it in the microwave for 30 seconds. Leaving the pizza on the pan for too long will burn the cheese base!

Total net carbs are only going to be 3-5 grams – it depends on how much pizza sauce you use.
Like all my recipes, it’s easy and fast. If it wasn’t so, I wouldn’t make it!

Another option is to grab a low carb tortilla and add your ingredients as above. Now slide this into the oven until the cheese begins to brown. Pizza sauce is naturally low carb so total net carbs here are going to be 7 or 8 for the tortilla version.

Experiment with it by adding different toppings and seasonings e.g. adding taco seasoning (like the one used in my taco salad recipe) to ground beef produces a really flavorsome dish.

Mark McManus

Great recipe. I can’t wait to try this. My kids have pizza about once a week or so, and I’ve been dieing to try some. I’m hitting the grocery store on the way home from work tonight!

Interesting concept. I used to do something similar, using egg white, LOTS of peas, sun-dried tomato and onion for the base. I didn’t whisk the egg too much so it stayed pretty firm, then topped it with tomato, spinach, peppers, cheese, then put it under the oven a couple minutes to get the cheese nice and crispy (an oven-space frying pan is VERY useful). I then cut it in wedges and enjoy! Okay, it’s not totally crispy like a pizza crust, and I guess it’s more like a fritatta, but it’s really yummy and super high protein. =)

I tried this last night….it didnt really go as planned though! i left the pizza cooking for a about 10-15 minutes and the cheese was turning black on the underside but it didn’t go hard…. so i just ended up with a plate full of mush (it still tated OK though)… did i do somthing wrong (i.e. too much pizza sauce or did i not leave it long enough to cook)?

Danny, maybe you need to try letting the cheese harden up before adding the sauce?

What kind of cheese did you use?

7 Danny September 20, 2008 at 12:28 pm

Hi Javacody, I just used regular cheddar cheese…. no i didn’t let the cheese harden up before adding the sauce but it didn’t say to do that in the recipe…. have you made this pizza with success?

8 javacody September 20, 2008 at 3:15 pm

Oh, maybe it was because you used cheddar? Try using Mozzarella.

I’ve not made this recipe yet, but I’m going to make it today for lunch, so I’ll let you know how it turns out.

Yeah, try letting the cheese brown a little before adding everything else if it’s turning out ‘floppy’ for you.

OK, so I finally made this recipe yesterday. It was awesome!

It was a little salty, I need to find some Mozzarella with less salt, I guess.

Mark, with your help, I never feel like I need to cheat on a low carb diet, thanks my friend!

That is pretty close to what I did except I used turkey pepperoni and added a little mozzarella on top as well (not sure from your recipe if this is what you do, but that’s what the photo shows). I’m still amazed at how I didn’t miss a bread crust at all!

This goes great with some Buffalo Wings, by the way!

14 Mark McManus September 21, 2008 at 7:38 pm

That’s funny – the pizza I made a little earlier had extra cheese on top.
It’s cool how the hardened cheese makes an amazing crust. mmmm buffalo wings.
